Low Fat Sugar Free Cream Puffs

Ingredients

    1cup water
    4 Tablespoons butter
    1 cup White Whole Wheat
    4 eggs


    3 cups fat free milk
    1/2 cup cornstarch
    1/2 cup Truvia sweetener
    2 eggs
    1 Tablespoon butter
    1 Teaspoon almond extract
    2 Teaspoons vanilla

Directions

Boil 1 cup water with 4 Tbsp. butter. Remove from stove. Stir in 1 flour. Beat 4 eggs on at a time into flour dough. Use small cookie scoop to mound on parchment covered baking sheet. Bake at 350 degrees for 45 minutes.
PUDDING:
In sauce pan mix 3 cups skimmed milk; 1/2 cup cornstarch; 1/2 cup Truvia. Bring to a boil and cook for 2 min. while thickening. (stir constantly so it doesn't stick or scorch) Take pan off stove and add 1/2 cup of thick hot pudding to 2 well beaten eggs and beat to combine. Then add pudding mixture with eggs in it back to the rest of the pudding mixture and beat well and cook for about another 2 min. (stir constantly to prevent egg from lumping.
Let cool mostly before filling cream puff shells.

Serving Size: makes 24 1 1/2" to 2" cream puffs
