Mashed Potatoes w/Evaporated Milk

Number of Servings: 4

Ingredients

    *Potato, raw, 3 medium (2-1/4" to 3-1/4" dia.)
    Milk, canned, evaporated, .5 can (13 oz)
    *Margarine, PC Calorie Reduced Margerine, 2 tsp

Directions

Peel potatoes and cut into 1 in cubes.
Place potatoes in boil water
Cook until potatoes can be easily poked with a fork
Strain and place in bowl
Add Margarine
Add milk, 3/4 cup at a time
Blend all ingredients with fork until reach desired consistency.
Add salt to taste

Serving Size: Makes 4-5 servings, 1-cup
