Chicken Cacciatori

Number of Servings: 5

Ingredients

    3 chicken breasts (25 ounces)
    1 medium onion chopped
    1 can diced tomatoes (15 ounces)
    3 carrots cut in 1/2 inch slices
    1 medium cjhopped green pepper
    1 cup sliced mushrooms
    1/2 cup red wine
    1/2 tsp thyme
    1/2 teasponn basil
    1/4 oregano
    3 tsp crushed garlic

    salt and papper to taste

Directions

Cut chicken in one inch pieces.
In a heavy pan add chopped onion, chopped green pepper. and garlic. Stirring occasionially, stir until limp. Slowly add chicken, stirring and cooking until no longer pink. Add tomatoes, wine, sliced carrots, chopped green pepper, sliced mushrooms, and condiments. Cook on low for low for 30 minutes.

Serve plain or over rice or pasta.

Delicious
Serve as is, or with rice, or noodles.

  • This was a bit flat; needed hot sauce to give it pizzaz. Also, directions were not clear enough and there was not enough liquids to cook carrots properly. Too dry to serve with rice (pasta would be better choice). Would not do again. - 11/2/10
