Introduction

This soup can be served as is for a very low calorie lunch, but I like to crumble homemade vegan sausage into it, its reminiscent of corned beef and cabbage. This soup can be served as is for a very low calorie lunch, but I like to crumble homemade vegan sausage into it, its reminiscent of corned beef and cabbage.
Number of Servings: 28

Ingredients

    1 large head of cabbage, chopped
    1 large onion, diced
    6 cups vegetable broth
    5 medium carrots, diced
    5 medium red potatoes, diced
    1 28 oz can diced tomatoes with juice
    1 6 oz can tomato paste
    1/2 teaspoon ground cloves
    1 teaspoon oregano
    1 teaspoon crumbled bay leaf
    1 teaspoon salt
    1 teaspoon garlic powder
    two or three dashes Tabasco sauce
    2 Quarts Water

Directions

Chop all vegetables, combine all ingredients in a VERY large pan (8-10 quart size is best). Bring to a boil, reduce heat and simmer until all vegetables are tender.

Adjust spices to taste.

Serving Size: Makes 28 servings, 1 cup each
