Ingredients

1/2 cup diced red potato's
2 tablespoons of olive oil
1/3 cup diced onion
1/3 cup mushrooms
1 garlic clove chopped
Hillshire Farm Smoked Sausage (1 serving diced already cooked)
6 large eggs
1/3 cup 2% milk
dalt and pepper to taste
Tips
Directions
Pre-heat oven to 350 degrees
Heat Olive oil in an 8 inch cast iron pan over stovetop
Add potatoes and cook stirring frequently until potatoes are slightly done
Add onion, mushrooms, garlic, and sausage. Cook until onions are translucent and potatoes are fully cooked.
Add kale and stir frequently until Kale has wilted into other veggies
Crack 6 eggs into another bowl and wish together with milk.
Add Salt and pepper to egg mixture
Pour egg mixture over veggies in pan.
Keep cooking over stove top until edges look done but center is still undone (about 2 minutes)
Place pan into preheated oven.
Bake for 15-20 minutes until knife pushed into center comes out clean.
Serving Size: makes 8 servings
