Meatless Chili - Clean, different and tasty!

Introduction

Takes time to cook, but hardly any work to prepare. Absolutely delicious! Healthy! Hearty portions. What more can you ask? I use a chicken stock, but use vegetable stock for a Vegetarian chili. Number of Servings: 6

Ingredients

    1 Tsp Olive Oil
    1lb Mushrooms
    1 Onion, chopped
    5 Medium Tomatoes, chopped
    3 Cups of mixed legumes (soaked overnight)
    1/2 Cup Edemame (frozen and shelled)
    1lb Greens of your choice (spinach in calcs)
    1 tsp chopped ginger
    3 Cloves garlic, chopped
    8 Cups of Chicken Stock (or vegetable, beef)

    Seasonings-
    3 Bay leaves
    1 tsp honey, raw
    1 tsp Thai Chili Sauce
    3 T Chili powder (more to taste)
    1 tsp Sea Salt (or to taste)

    Garnish-
    1 Juice of lime
    1/4 C Fresh Parsley, chopped


Directions

Saute mushrooms and onions until onions are translucent and all liquid is evaporated.

Add seasonings, garlic and ginger and cook for one minute.

Add tomatoes and saute for an additional 2 minutes.

Add stock and beans and edemame. Bring to a boil. Reduce heat and simmer for two hours.

Add greens and simmer until greens are wilted - time varies with dark green used.

Add chopped parsley and lime juice before serving.

Garnish with shredded cheddar or tex mex cheese (not included in nutritional information)
