Betty's Mexican Rice

Introduction

Mexican rice that's different from what is served in Mexican restaurants. Mexican rice that's different from what is served in Mexican restaurants.
Number of Servings: 6

Ingredients

    1/2 cup chopped green bell pepper
    1/4 cup chopped onion
    1clove garlic, minced
    1/2 teaspoon dried basil, crushed
    1/2 teaspoon dried rosemary, crushed
    2 tablespoons olive oil
    1 cup brown rice
    1 cup chopped tomato
    1 teaspoon salt
    1/8 teaspoon pepper

Directions

In skillet cook green pepper, onion, garlic, basil and rosemary in hot oil until the vegetables are tender. Stir in rice, tomato, salt, pepper and 2 cups of water. Cook covered. over medium low heat for about 45 minutes, or until rice is done.

Serving Size: 6 1/2 cup servings
