Corn Bread Tamale Pie

Ingredients

    1 package Smart Ground Imitation Ground Beef
    1 medium Onion, chopped
    1 cup Black Beans
    1 cup Corn
    1 cup Tomato Sauce
    1 cup plus 2 T Low Sodium Vegetable Stock
    1/2 Green Pepper
    1 Jalapeno Pepper (Optional)
    1 T Chili Powder
    1/2 tsp Ground Cumin
    1/2 tsp Black Pepper
    1 1/2 cups Yellow Cornmeal
    2 T All-Purpose Flour
    2 T Stevia
    1 T Baking Powder
    1 tsp Salt
    2 large Eggs
    2/3 cup Skim Milk

Directions

Preheat oven to 425 degrees

In a large skillet, saute the imitation ground beef and the onion for 5 - 10 minutes.

Add the black beans, corn, tomato sauce, 1 cup vegetable stock, green pepper, jalapeno pepper, chili powder, cumin, and black pepper. Simmer for about 15 minutes.

In a separate bowl, mix the cornmeal, flour, Stevia, baking powder, and salt.

Separately mix the eggs, skim milk, and 2 T vegetable stock, then combine the wet ingredients with the dry.

When the meat mixture is done, pour it into a 3-quart baking dish and then pour the cornmeal mixture over top.

Bake for about 20 - 25 minutes (until the cornbread is just slightly browned)
