Veggie Sausage lentil stew

Ingredients

    1 pkg Veggie italian Sausage, diced
    1 cup diced carrots
    1 cup diced celery
    1 medium onion(s), diced
    4 clove garlic clove(s), diced
    3 cups water
    red potato about 1 lb, diced
    14 1/2 oz vegetable broth
    1 1/2 cups dry lentils
    3/4 tsp table salt
    1 tsbp ground cumin
    3 cups organic diced tomatoes

Directions

Dice sausage, carrots, and celery. Dice onion and potato. Mince garlic.
In a Dutch oven sauté sausage in olive oil until browned, add carrots, celery, onions and garlic and saute until vegetables are almost tender.
Stir in water, potatoes, broth, lentils, salt and cumin. Bring to a boil. Reduce heat, cover and simmer 40 minutes or until potatoes are tender, stir occasionally. Add tomatoes and heat through.
