Ethiopian Cabbage

Introduction

Ingredients

    1/4 C Olive Oil
    4 Carrots, thinly sliced
    1 Onion, thinly sliced
    1 tsp sea salt
    1/2 tsp black pepper, ground
    2 cloves garlic, finely chopped
    1/2 tsp ginger, finely chopped
    1/2 tsp ground cumin
    1/2 tsp ground turmeric
    1 head cabbage chopped
    5 Potatoes, cut into 1-inch cubes


Tips

You may think that you need to add water to this dish but you do not. It is good as is.


Directions

Heat the olive oil in a skillet over medium heat. Cook the carrots and onion in the oil for about 5 minutes. Stir in the seasonings and cabbage and cook another 15-20 minutes. Add the potatoes and cover.

Reduce heat to medium-low and cook until potatoes are soft. 20-30 minutes.
