RICE AND TOMATOES

Introduction

Ingredients

    2 tsp. olive oil
    1/4 cup chopped green pepper
    1/4 cup chopped onion
    1 cup white rice
    2 cups chicken broth
    2 cups stewed tomatoes
    2 tsp sugar
    1/2 cup pecorino romano cheese, grated

Directions

Preheat oven to 350 degrees. Heat oil in oven safe skillet. Add onion, peppers and rice. Saute until vegetables and rice are lightly browned. Add tomatoes and sugar; mix well. Top with cheese. Cover and make for 45 mintues. Serve immediately.
