Introduction

The xanthan and guar gums help make this into a smooth and creamy creamy protein treat. I used a Vitamix blender. I'm not sure how well a regular blender would break down the ice. Number of Servings: 1

Ingredients

    1/2 c. almond milk
    1/2 tsp xanthan gum
    1/4 tsp guar gum
    1 T. unsweetened shredded coconut
    28 g. whey protein isolate (I used NOW unsweetened and unflavored)
    1/4 tsp vanilla extract
    NuNaturals vanilla stevia extract to taste
    Pinch salt
    ice cubes, about 8
    Freshly ground nutmeg

Tips

I think it would have had better flavor if I had let the coconut soak in the almond milk for a while and if I'd had vanilla almond milk.


Directions

Combine almond milk, gums and coconut in blender and run at slow speed. Let sit for a minute or two until the gums begin to make it more viscous. Add all ingredients except ice and blend. Add in ice cubes and blend until the mixture becomes smooth and the ice crystals are not so visible.

Serving Size: 1 large bowl
