Almond Power Cookies

Introduction

My daughter's cross country team loves these! My daughter's cross country team loves these!
Number of Servings: 24

Ingredients

    1/2 C almond butter
    4 oz. baby prunes
    3/4 C. brown sugar
    1 egg
    1 t. vanilla extract
    1 C. whole wheat flour
    1 1/2 C. oats
    1/4 t. salt
    1/4 t. baking soda
    1/2 C. soy protein powder
    1/4 C. milk
    1/2 C. raisins

Directions

Preheat oven to 375 degrees
Lightly coat cookie sheet with cooking spray.
Cream together almond butter, prunes, and sugar. Add the beaten egg and vanilla to the mixture and blend well.
In a seperate bowl stir together flour, oats, salt, baking soda and soy protein.
Combine with creamed mixture and add milk and raisins.
Drop by rounded tablespoons onto cookie sheet.
Bake 10-12 minutes until lightly browned
Makes 24 cookies
Serving Size: 1 cookie per serving
