Good For You Greek Salad

Introduction

A healthy, tasty salad. A healthy, tasty salad.
Number of Servings: 2

Ingredients

    1 large tomato, cut into chunks
    1/2 cucumber, thick slices, quartered
    1/2 cup red pepper, roughly chopped
    1/2 small red onion, chopped
    1 tbsp extra virgin olive oil
    1/2 tsp fresh lemon juice
    1/2 tsp red wine vinegar
    1/2 tsp dried oregano
    1/4 cup low fat ricotta cheese
    2 Kalamata olives, pitted & sliced

Directions

In small bowl, mix extra virgin olive oil, lemon juice, red wine vinegar & oregano. Set aside. I large bowl, mix tomato chunks, cucumber, red pepper, onion. Add olive oil mixture & mix well. Add riccota cheese & sliced olives & toss gently.

Serving Size: Makes 2 servings
