Mike's Chicken & Veggies

Ingredients

    2 chicken breast, butterflied (to make 4 pieces)
    1 can Campbell's Health Request Cream of Mushroom Soup + 1/2 can water
    1 pkg. Birds Eye Broccoli Stir-Fry
    1.5 cups Portabella mushrooms, rough chopped
    4 tbsp Country Crock margarine
    2 tbsp Shallots
    1 tsp lemon juice
    4 oz. white wine
    Onion powder, garlic powder, sea salt, black paper, basil, oregeno to taste

    Chicken marinade:
    1/4 c. red wine vinegar
    1 tbsp. extra virgin olive oil

Directions

1. Place whole chicken breasts in marinade for 30 minutes to an hour.
2. Saute shallots and mushrooms in margarine until shallots are translucent. Set aside.
3. Butterfly chicken, season, and sear until almost done.
4. Set aside and let rest.
5. Deglaze pan with white wine. Allow to reduce by half and add mushrooms, shallots, and veggies.
6. Heat until veggies are almost done - add soup, water and chicken.
7. Let simmer for about 10 minutes. ENJOY!!!
