Gluten Free Sponge Cake

    150g Margarine
    150g Granulated Sugar
    2 Medium Eggs
    2 drops Vanilla Extract
    1 tsp Gluten Free Baking Powder
    150g Gluten Free White Self-Raising Flour (I use Dove Farm)
    3 tbsps Milk (I use 1%, but it should work with anything!)


Because this is made with Gluten Free Flour, it will be runny. DO NOT ATTEMPT TO THICKEN WITH MORE FLOUR!!! It will destroy the recipe! Also, once cooked, it may look more yellow than usual, this is because of the flour!


Serving Size:Serves 8 (depending on how large you cut the slices!)

Cream the margarine and sugar together until fluffy.
Beat in the eggs and add the vanilla extract.
Fold in the flour and the baking powder. Beat well.
Add the milk (DO NOT THICKEN!)

Bake at 190C for 20 minutes, or until done.
