12 oz. cooked skinless chicken breast
10 broccoli sprears (5")
1 cup brown rice, 2 cups water
1 can cream of chicken soup
1/2 cup light sour cream
1 Tbs. lemon juice
3 garlic cloves
1/2 medium onion
1 cup mushrooms
1 Tbs. olive oil
1 cup shredded cheddar cheese
3 slices Ezekiel 4:9 cinnamon raisin bread
2 Tbs. soft butter
1/4 tsp. salt
1/8 tsp. pepper
Steam broccoli until slightly tender.
Saute garlic, onion, and mushrooms in olive oil
Cut cooked chicken into bite-sized pieces
In medium bowl, combine the chicken soup, sour cream, lemon juice, chicken, sauteed vegetables, 1/2 cup of the cheddar cheese, salt and pepper.
Toast 3 slices of the cinnamon bread, then grind up fine in a food processor or blender. Add 2 Tbs. soft butter to make crumb topping.
Lightly spray a 9x12 pan with cooking spray and place the cooked rice on the bottom, spreading out evenly.
Pour the chicken mixture evenly on top of the rice.
Arrange the broccoli spears on top of the chicken mixture.
Sprinkle top with the remaining 1/2 cup cheddar cheese and toasted bread crumb mixture.
Bake 20-30 minutes, until heated through.
