"Butter" Soup

Introduction

Although the original recipe used butter & cream, I omit these ingredients. If using cream, a little goes a long way, and does alter the flavour if you prefer a creamier soup. Number of Servings: 14

Ingredients

    1 package, approx 700 g Mennonite Sausage, cut into small bite-sized pieces
    1 medium Onion, diced
    525 g Potatoes, about 4 medium - large, diced
    1.5 cups Macaroni, raw
    10 cups hot Water
    1 or 2 Bay Leaves
    12 Peppercorns
    1 tsp Parsley

Directions

Brown onion and sausage in large saucepan or dutch oven. Add water, potatoes, and seasonings. Bring to boil and simmer for 20-30 minutes. Add macaroni or other pasta (egg noodles are good) and simmer until pasta is cooked to taste.

Serving Size: Makes 14 cups, about 9 1.5 cup servings.
