1.5 cups fajita veggies (from Frozen section or use 1.5 cups of favorite veggies)
16 oz of round eye steak (Flank steak would probably work even better)
2 tbs chili powder
1 tbs cumin
2 tsp cayenne pepper
2 pinches of pepper
.25 cups of 2% Milk
1 cup of finely shredded mexican blend cheese
Add 1 tablespoon of olive oil to a 10 inch oven safe pan
Add Steak and cook for 3-4 minutes
Cut the round eye steak into cubes. Add your chili powder, cumin and cayenne pepper, and stir until spices are well mixed with the meat.
Add meat to heated pan and cook for about 3-4 minutes.
Add Fajita Veggies and cook with steak until both are cooked.
Wisk eggs and milk together and then add half of the cheese, again whisking until combined
Finally pour the egg mixture on top.
Top with remaining cheese.
Continue to cook on stove top for 2 minutes until bottom has formed.
Place pan into preheated oven at 400 degrees
Bake for 7-11 minutes until frittata is golden brown and a knife placed in center comes out clean.
