1 large onion, chopped
3 medium carrots, chopped
3 medium stalks celery, chopped
4 cups chopped broccoli, fresh or frozen
1 red bell pepper, chopped
3 large potatoes, chopped
2.5 lbs boneless, skinless chicken breast, cooked and cut into bite sized pieces
4 cups chicken broth
1 can cream of chicken soup, prepared
Add the bell pepper and broccoli and cook for another minute.
Transfer mixture to a stockpot and add the remaining ingredients. Cook over medium low heat until vegetables are tender.
This stew also works well in a crockpot.
Makes 18 one cup servings.
