Tropical Paleo Pancake

Introduction

Big treat when you need a sweet. Big treat when you need a sweet.
Number of Servings: 2

Ingredients

    .24 cup almond flour
    2 large eggs
    4 oz unsweetened almond milk
    .125 teaspoon cinnamon or nutmeg
    .125 raw, shredded coconut
    .125 cup sliced almonds
    .125 diced pinapple (and or mango/bananas/papaya)
    .5 teaspoon coconut crystals
    1.5 tablespoons olive oil
    pinch of salt

Tips

A few slices of bacon make a nice addition.


Directions

Mix almond flour, eggs, spices and salt. Stir in sliced almonds.
Heat olive oil or bacon fat and olive oil on medium heat.
Pour batter in pan and coat entire bottom of pan similar to look of crepe. Cook 5-7 minutes then flip. Cook about 5 more minutes.
Sprinkle cinnamon and coconut crystals on top. Spoon fruit on top and sprinkle with raw, shredded coconut.

Serving Size: 1 large pancake
