3 chicken thighs, boneless and skinless
1/4 teaspoon kosher salt
1/8 teaspoon pepper
2 tablespoons vinegar
1 medium stalk celery, shopped fine
1/3 cup finely chopped onion
COMBINE all the ingredients in a bowl except the mayonnaise, salt & pepper and stir. Let sit for 1 hour (or more) in the refrigerator. Press chicken mixture with paper towel to remove any remaining moisture.
ADD mayonnaise, salt & pepper to chicken mixture and stir to combine.
REFRIGERATE at least one hour before serving
