Debbie's Chicken Salad

Number of Servings: 6

Ingredients

    3 chicken thighs, boneless and skinless
    1/4 teaspoon kosher salt
    1/8 teaspoon pepper
    2 tablespoons vinegar
    1 medium stalk celery, shopped fine
    1/3 cup finely chopped onion

Directions

COOK chicken by any method (fry, bake, microwave) until cooked through. Cool and chop or shred into fine pieces


COMBINE all the ingredients in a bowl except the mayonnaise, salt & pepper and stir. Let sit for 1 hour (or more) in the refrigerator. Press chicken mixture with paper towel to remove any remaining moisture.


ADD mayonnaise, salt & pepper to chicken mixture and stir to combine.


REFRIGERATE at least one hour before serving

Serving Size: Makes six 2.3 ounce servings
