Roast Apple Fennel & Onion


Number of Servings: 4


    Fennel, 1 bulb (remove)
    Apples, fresh, 2 medium (2-3/4" dia) (approx 3 per l (remove)
    Onions, raw, 1 large (remove)
    *Fennel seed, 1 tbsp (remove)
    Olive Oil, 2 tbsp (remove)
    Salt, 1 dash (remove)


Chop fennel in medium chunks. Core apple and cut in chunks. Peel and large dice the onion. Preheat your oven to 375F. Put fennel, apples, onion and fennel seed into a large roasting pan. Season with salt and pepper and splash with olive oil. Toss well and roast in oven until golden brown and caramelized, about 30 minutes.
