Bean and Sausage Soup
IntroductionUse any type of bean, black, pinto, cannelini, etc. Use any type of bean, black, pinto, cannelini, etc.
Number of Servings: 4
7 oz smoked turkey sausage
1 onion, chopped
1 poblano Chili, chopped
1 red bell pepper, chopped
1/4 tsp salt
2 cans cannelini beans(or your favorite kind), rinsed and drained
3 1/2 cups chicken stock
2 tblsp cilantro, finely chopped
1/4 cup sour cream
corn tortillas, warmed
Nutritional information does not include the tortillas.
Slice the sausage lengthwise, Then into half moon slices. Brown sausage. Heat oil in large Dutch oven. Add onion and cook 5 minutes. Add peppers, cook until soft. Pour in beans and chicken stock. Stir in sausage. Heat until heated through. Stir cilantro and sour cream together. Serve soup with a dollop of sour cream and a warmed tortilla.
