Kohlrabi & Beans

Introduction

I asked my husband to pick up celery root so I could make some Hippocrates soup, but he came home with kohlrabi. Never seen or heard of it before, but we will be eating this again. This was great! I asked my husband to pick up celery root so I could make some Hippocrates soup, but he came home with kohlrabi. Never seen or heard of it before, but we will be eating this again. This was great!
Number of Servings: 1

Ingredients

    1 kohlrabi bulb
    1 cup beans, cooked (any kind)

Tips

I cook a batch of beans every few days and keep them in the refrigerator for use in meals such as this. If we don't use them soon enough, I freeze them in baggies.


Directions

1. Turn broiler on to high and spread parchment paper on baking sheet.

2. Shred kohlrabi and spread it on the parchment paper. Broil about 10 minutes.

3. Heat beans and top with kohlrabi.

Optional toppings: grated black pepper, parmessan cheese and/or parsley.

Serving Size: 1 serving, simple and delicious!
