Kohlrabi-Bean Salad Dressing (no added salt or fat)

Introduction

We liked the kohlrabi-bean combination, so decided to whip the leftovers into a high protein, natural salad dressing. We liked the kohlrabi-bean combination, so decided to whip the leftovers into a high protein, natural salad dressing.
Number of Servings: 4

Ingredients

    1 kohlrabi bulb
    1 apple
    1 carrot
    1 cup pinto beans, cooked
    1 t. ginger root, grated
    dash back pepper

Tips

I cut the apple into chunks and processed it first, then added the beans and processed until smooth. I then added shredded kohlrabi & carrot and grated ginger root, and pulsed until mixed, leaving some chunks in for color & texture. Didn't put all that in the directions, because I don't know that it really matters. We just added a few things at a time because we were experimenting and didn't know what we were going to throw in next!


Directions

Process in food processor, blender or auger-style juicer with a blank screen until smooth.

Serve on top of any lettuce greens, as you would a salad dressing.
