Cilantro Lime Cucumber Salad


Easy to prepare, beautiful to look at and it's super yummy!! Easy to prepare, beautiful to look at and it's super yummy!!
Number of Servings: 2


    1 large cucumber diced (I use the seedless variety)
    1 cup grape tomatoes (approx 12 to 14)
    1/2 onion sliced (I prefer red onions, they look nicer)
    1 cup mini portabella mushrooms diced (large pieces)
    2 ounces light cheddar cheese - diced

    1 tbsp extra virgin olive oil
    2 tbsp lime juice
    1 tbsp cilantro
    1 tbsp water
    1 clove of garlic minced


To reduce the fat, you could use a lighter olive oil, but I do prefer the full flavour of regular.


Chop and serve - it's that easy. I dress the salad, and then let it sit in the fridge for about an hour before eating. It seems to enhance the flavours!!
