Skimpy Shrimp Scampi

Ingredients

    2 tbsp olive oil
    3 garlic cloves
    1 lb shrimp
    1 lemon, juiced
    3/4 cup parsley
    1/4 tsp red pepper flakes

Directions

1. Place a large saute pan over moderate heat and add the oil. Once warm, add the garlic and saute until soft, about 1 minute. Do not let it brown.
2. Add the shrimp and saute until cooked (the shrimp will be firm and pink), 3 to 4 minutes. Stir in the lemon juice and parsley. Cook just 3 to 4 minutes longer (do not overcook or the shrimp will be tough). Remove from heat and season with the red pepper flakes.

Serving Size: 4-4oz shrimp servings
