Ingredients

    64 fl oz chicken stock
    50 g ginger root, chopped
    4 cloves of garlic, chopped
    2 stalk of lemon grass
    2 red chilin, seeded and chopped
    16 0z chicken filets
    2 red bell pepper
    10 small mushrooms
    2 tbsp fish sauce
    Juice of 1.5 lime
    2 13.5 cans of coconut milk
    5.5 oz Rice Noodle

Tips

Try without the noodles for less calories and serve with rice.


Directions

Bring chicken stock to a boil with ginger, garlic, lemon grass and chili. Let boil a few minutes while you cut the chicken in bite size dices, then add the chicken. Let boil for about 3 minutes and add the rest of the ingredients.

Serve with fresh cilantro.

Serving Size: Makes 8 x 1 1/2 cup servings
