Italian Turkey Meat Loaf

Ingredients

Meat Mixture:
1 lb Ground Turkey
1/2 cup Dry Bread Crumbs
1/2 cup Egg Substitute
1 6-ounce can Tomato Paste
1/2 cup Onion, finely chopped
1/4 cup Red Pepper, finely chopped
Filling:
1/2 cup Bread Crumbs
1 1/2 cups (12-ounce carton) 2% Cottage Cheese
1/2 mushrooms, chopped
1 tbsp Parsley
1/4 tsp Oregano
Directions
In a large bowl combine the ingredients for the meat mixture. Spray an 8x8x2-inch baking pan with PAM and put 1/2 the mixture in the bottom. In a separate bowl combine the ingredients for the filling. Spread it evenly over the meat in pan. Top with the remaining meat mixture.
Bake at 350 degrees for 1 hour. Let meat loaf stand 10 minutes before serving. Makes 8 servings.
