Crock Pot BBQ Beef

Ingredients

    1 t. olive oil
    1 med. onion
    2 cloves garlic, minced
    2 T. white vinegar
    1 cup black coffee
    1 t. Dutch cocoa
    1/2 cup beer
    1 cup chili sauce
    1/4 cup lite soy sauce
    juice and grated peel of 1/2 lemon
    2 T. Worcestershire sauce
    2 T. steak sauce
    few drops hot pepper sauce
    1 T. dry mustard
    1/4 t. of any or all of the following: celery seed, thyme, tumeric, marjoram, paprika, red pepper, ginger
    2 bay leaves
    2 T Molasses
    2 t. cornstarch
    5lb chuck roast

Directions

In a medium-sized, non-stick saucepan, heat oil. Saute onion and garlic for 2 min. Reduce heat and blend in remaining ingredients, whisking in the cornstarch last. Place roast in crock pot, pouring sauce over top. Cook on low 8-10 hours. Shred with fork and serve with onions on whole wheat buns.
