Introduction

Number of Servings: 14

Ingredients

    1.5 cups 1% milk
    2 eggs
    2 tsp vanilla extract
    3 tbls melted butter

    1.5 cups gluten free all purpose baking mix
    3/4 tsp salt
    2 tsp baking powder
    2 tbls white sugar


Directions

mix together gluten free flour, salt, baking powder and sugar in a small bowl and set to the side. In a large bowl combine milk, eggs and vanilla and beat with an electric mixer for 3 minutes. Mixture will double in volume and be very frothy.
stir in melted butter.
quickly stir in flour mixture for about 30 seconds to 1 minute, mixing until just combined. Do not over mix. lumps in batter are ok.

let sit for 10 minutes and then grill up like you would normal pancakes.
