Mediterranean Barley

Ingredients

    1 T margarine, hard
    1.5 T chopped (fine) shallot
    1 cup pearl barley
    15 oz chicken broth
    2 bay leaves
    1 cup finely chopped carrot
    4 mini bell peppers, finely chopped
    1 tsp lemon zest, fresh
    salt & pepper to taste (not in calculation)

Directions

Saute shallots in melted margarine for 4-5 minutes. Add barley, stirring constantly until margarine absorbed. Add broth and bay leaf; bring to boil. Reduce heat to low, stir, cover. Simmer until barley is almost tender (~35 minutes).

Add carrots and peppers, cover. Cook for 8-10 minutes, or until veggies are tender.

Remove from heat, add lemon zest, cover and let sit for 10 minutes.

Remove bay leaf prior to serving.

Serving Size: Yields 4 servings
