Introduction

Number of Servings: 10

Ingredients

    for 10 cookies:

    1/2 cup whole wheat white flour
    2 eggs
    1/4 cup organic butter
    1/4 cup granulated sugar
    1 teaspoon vanilla extract
    2 teaspoons freshly ground golden flax seeds
    1 teaspoon raw sesame seeds

    for icing:

    1 tablespoon confectioner sugar
    1 tablespoon Trader Joe's unsweetened cocoa powder
    1 tablespoon Trader Joe's mesquite honey
    1 tablespoon organic butter
    1 tablespoon freshly ground sunflower seeds
    1 tablespoon warm water

Tips

When warm, mix together the icing ingredients in a small bowl using a small rubber spatula. I grind my seeds and nuts using a small coffee grinder. It is a wonderful tool to have in the kitchen to grind flax seeds which need to be crushed to benefit from the omega oils.


Directions

Place the butter and sugar in a bowl and use a mixer to whip and cream together. Add flour, eggs, vanilla and continue to beat until creamy smooth. Add in ground flaxseed and sesame seeds and stir until blended.

Place 1 tablespoon full of batter for each cookie onto a greased cookie sheet or greased parchment paper on a cookie sheet. These cookies will expand out so give enough room. Bake 15 minutes at 350 degrees.
