2- 4 1/2 ounce chicken thighs, boneless & skinless
10 ounces frozen spinach thawed, drained & squeezed dry
2.4 ounces garlic & herb goat cheese, semi-soft
4 teaspoons Mrs Dash Garlic & Herb Seasoning, divided
MIX the spinach, goat cheese and 3 teaspoons of the Mrs Dash seasoning until well blended
PLACE each piece of chicken between 2 pieces of waxed paper and pound until each piece is about 1/4 thick (or a little less) thick all over.
DIVIDE the spinach mixture in half and make two short fat tubes.
PLACE one "tube" of spinach at the skinniest end of a chicken thigh and roll up. Repeat with the other roll and thigh. Secure each roll with a toothpick if necessary.
PLACE the chicken rolls in a baking dish sprayed lightly with oil. Spray the tops of the chicken and sprinkle with the remaining teaspoon of Mrs Dash.
BAKE covered for about 15 minutes. Remove the cover and continue baking for an additional 15 minutes or until the chicken is done and the top is golden brown.
