Valkyria-'s Chocolate Snickerdoodle Steel-Cut Oats

If you ever had trouble eating breakfast in the morning, this will cure it.

Number of Servings: 5

Ingredients

    1 cup steel-cut oats, dry
    3 cups Almond milk (plain, unsweetened)
    1 tbsp cocoa powder
    2 tbsp slivered almonds
    2 tbsp shredded coconut (unsweetened)
    1/2 tsp cinnamon ground
    2 tiny drops of vanilla extract
    1 tbsp honey (or sweetener of your choice)

Tips

I Make these Sunday night, then enjoy them throughout the week for breakfast -- I like to add fresh strawberries or raspberries and a dollop of plain greek yogurt to mine.


Directions

Bring almond milk, cocoa powder, and oats to a boil, then reduce heat and let simmer, stirring occasionally, until they are the desired texture (I prefer mine chewy, but if you like yours softer, add 1/2 cup more water). Cooking time is usually 15-20 min for me.

Add almonds, coconut, vanilla extract, and cinnamon. Stir to combine.

Chill in the fridge and enjoy for up to 5 days.

Serving Size: 1/4 cup .. makes 5 servings
