*Potato, 2 medium cubed
Onions, raw, .5 cup, chopped
*Peppers, sweet, red, fresh, .5 cup, chopped
Egg, fresh, 8 large beaten
Basil, .5 tbsp
Pepper, black, 2 tsp
*Ground Red Pepper, 0.5 tsp
Cheddar cheese, shredded, .5 cup
Spray skillet, cook potatoes, onion and bell pepper over medium heat for 5 min.
In small bowl mix remaining ingredients pour into skillet. As mixture starts to set on bottom, lift from sides to allow uncooked portion to flow to bottom. Cook 3-5 min till eggs are thicken though out but still moist. sprinkle with cheese allow to melt and serve.
