Bisquick Impossible Mini Chicken Pot Pie

Ingredients

    1 Tbsp canola oil
    12 oz cooked chicken breast
    1/2 C chopped onion
    1/2 C chicken broth
    1/2 C frozen peas
    1/2 C cooked chopped carrots
    1/2 tsp salt
    1/4 tsp pepper
    1/4 tsp thyme
    1/2 C shredded cheddar cheese

    Baking Mix:
    1/2 C Bisquick HeartSmart baking mix
    1/2 C milk
    2 eggs

Directions

Heat oven to 375 degrees. Spray a large (6) with nonstick spray.

In a medium skillet, heat oil over medium high heat. Cook chopped chicken until heated through; add onion and chicken broth; heat to simmering. Add peas, carrots and seasonings. Heat until hot, stirring occasionally. Cool 5 minutes; stir in cheese.

In a medium bowl, stir baking mixture ingredients with a whisk or fork until blended. Spoon 2 Tbsp baking mixture into each muffin cup. Top with 1/2 C chicken mixture. Spoon 2 Tbsp baking mixture onto chicken mixture in each muffin cup.

Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Cool on wire rack for 10 minutes and serve
