Sweet, Sour Chicken with a little heat

Introduction

My boyfriend got creative the other night and mixed and matched and this is what he came up with... it was sweet and sour chicken with a kick served over some noodles... would taste great on a bed of brown rice too! My boyfriend got creative the other night and mixed and matched and this is what he came up with... it was sweet and sour chicken with a kick served over some noodles... would taste great on a bed of brown rice too!
Number of Servings: 6

Ingredients

    4 bones skinless chicken breast, cut into bitesized pieces
    1/2 red pepper, chopped
    1/2 onion, chopped
    3 granny smith apples, peeled, cored, chopped
    1 cup pineapple juice
    1/2 cup rose wine (white would work too)
    ground black pepper, cayenne pepper, crushed red pepper (any or all of these to taste)
    1 package egg noodles, cooked according to package directions
    1/4 cup corn starch, dissolved in 1/4 cup water

Tips

My boyfriend and I like things hot so he used all of the pepper - black, cayenne and crushed red. If you don't like things quite so hot, leave one or more out of just add slowly, tasting frequently until desired level of heat is reached.


Directions

Heat a deep skillet and add meat, onion, and pepper. Add pineapple juice and wine. Bring to a boil and add apples. Add seasoning, reduce heat and simmer for about 20 minutes. While this is cooking, heat water and prepare noodles. When noodles are just about finished, dissolve cornstarch in 1/4 cup of cold water and stir into the meat and veggie mixture. This will slightly thicken your sauce. If sauce is too thin, make a little more cornstarch mixture and slowly add until thickened enough. If it is too thick, add a little more pineapple juice or wine to thin out the sauce.
Serve over hot noodles.
