Ingredients

One eggplant aprox 1 pound
one large onion
one large red sweet pepper
2 T. olive oil
savory spices, salt and pepper
Tips
I covered the casserole with foil and every 15 min or so pushed down the vege's to get all the juices from the eggplant mixed with the spices. It makes all the flavors come together best.
Directions
peel eggplant and cut in cubes
peel and chop onion and chop pepper in slices
Take one T of oil and grease casserole dish
Layer each vege with spices then add another layer with spices. Add 1 T olive oil to top
Bake 375 for about an hour or until eggplant is tender.
Serving Size: Makes 4 large servings or 6 smaller ones
