Yellow Rice With Peas

Number of Servings: 4

Ingredients

    1 Tbsp extra virgin olive oil
    1/2 cup chopped onion
    1 cup long-grain rice
    2 tsps italian seasoning
    1/2 tsp ground tumeric
    2 cups chicken broth, low sodium
    1 cup frozen peas

Directions

Heat 1 Tbsp oil in large skillet. Add 1/2 cup chopped onion, cook and stir 3 minutes. Add 1 cup long-grain rice, 2tsps italian seasoning and 1/2tsp ground tumeric. Cook and stir 2 minutes. Stir in 2 cups chicken broth, bring to boil, cover, simmer 15 minutes. Stir in 1 cup frozen peas; cover. Cook 10 minutes or until rice is tender.


Serving Size: 4 1-cup servings
