Introduction

Fabulously tasty and SO low-cal! Fabulously tasty and SO low-cal!
Number of Servings: 4

Ingredients

    1 medium onion, chopped
    1 cup or 1/2 a package frozen spinach
    2 cloves garlic, minced
    1 3/4 cup lentils
    3 veggie bouillon cubes

Tips

Add a dash of balsamic vinegar (or hot sauce!) for more flavor if you need it.


Directions

Place a small amount of water in a stock pot and sautee onions and garlic in it (great tip for not using oil). When somewhat soft, add in frozen spinach and cook until thawed.

Rinse lentils and add to pot and stir for a minute or two. Pour in water, add bouillon cubes and cook for about 30-40 mins or until lentis are soft. SO TASTY.
