Cool & Crispy Tofu Lettuce Wraps

Introduction

Spring inspired me to make this light lunch dish! Crunchy, sweet and savory.......totally satisfying. Spring inspired me to make this light lunch dish! Crunchy, sweet and savory.......totally satisfying.
Number of Servings: 3

Ingredients

    1 block extra firm tofu, drained
    1 C snap peas, chopped
    1 large carrot, grated
    1 C cabbage, shredded
    2 C bean sprouts
    2 T sesame oil
    2 T white wine vinegar
    2 T braggs liquid aminos (or soy sauce)
    1 tsp garlic salt
    1 T honey
    9 large iceberg leaves, washed

Directions

Drain tofu well; dice and toss into bowl. Add diced snap peas, cabbage, carrot and bean sprouts. In small bowl, mix oil, vinegar, braggs, garlic salt and honey. Whisk well, then pour over tofu salad. Toss until salad is coated. Each serving (3) is enough to fill three large iceberg lettuce wraps. Tastes great after flavors have melded overnight!

Serving Size: Makes 3 servings (each with 3 large iceberg "wraps")
