turkey noodle soup

Introduction

Leftover turkey noodle soup Leftover turkey noodle soup
Number of Servings: 4

Ingredients

    1 cup chopped onion
    1 cup chopped celery
    1 tsp olive oil
    2 cups light and dark meat turkey
    2 cups chopped carrots
    1 tsp fresh lemon thyme
    1 tsp herbs de provence (basil/rosemary/etc)
    dash of salt
    1 tsp fresh ground pepper
    1.5 cups egg noodles

Directions

saute onion and celery in olive oil
put rest of ingredients except for noodles in pan and bring to boil
when ready to serve, bring to boil and drop noodles in to cook per instructions (mine were homemade and only needed 2 minutes in the boil)

Serving Size: makes 4 hearty bowls
