2 yellow bell peppers, cut into strips
2 small onions, cut into wedges and layers separated
4 roma tomatoes, seeded and cut into strips
2-4 Tbsp lime juice
1 Tbsp cumin
2 tsp oregano
Salt/pepper to taste
12 corn tortillas
Heat cast iron skillet over high heat and add onions and peppers. Cook 7 minutes, stirring occasionally, and adding a little water if they start to stick.
Add tomatoes, lime juice, and spices. Cook until tomatoes heat through and start to get tender.
Serve with heated tortillas and whatever toppings you like. I like them as is.
