Chicken Stir Fry

Introduction

I make this frequently as the whole family loves it and it is a lot of food for one serving. I make this frequently as the whole family loves it and it is a lot of food for one serving.

Ingredients

    2 boneless skinless chicken breasts cubed
    2 tbsp. light soy sauce
    1/2 half a box of ronzoni smart taste thin spaghetti
    1 bag of Green Giant Steamers Mixed Vegetables
    2 tbsp. extra virgin olive oil

Tips

I trim all the fat off of the chicken before cooking to lower the fat content. As for veggies you can use whatever you like and this is really good with a broccoli, cauliflower, carrot blend as well.


Directions

Cut chicken into 1" cubes and season with whatever seasonings you like. Saute in the 2 tbsp. olive oil until mostly cooked. While the chicken is cooking boil the water for pasta, once it is boiling break pasta in half and put into water and cook according to package. Cook the veggies for the least time listed which is 5 minutes. This will leave them slightly underdone so that you can finish them with the chicken. Once the veggies are done add them to chicken and continue to saute while waiting on pasta. Once pasta is done drain and pour into chicken and veggie mixture. Once you stir all ingredients together add 2 tbsp. soy and stir. Cook another 5-10 minutes on low just to incorporate flavors.
