Tomato, Scallion, and Asparagus Egg White Omelet

Ingredients

    .5 cup egg whites

    2 small spears asparagus

    .4 cup cherry tomatoes

    .25 cup fat free mozzarella

    .25 cup scallions

Directions

Steam asparagus until crisp-tender, cool, and slice diagonally, 1 inch long. Heat frying pan over medium heat, spray with cooking spray. Pour egg whites in pan, allow to set until very little liquid left on surface. Add tomatoes, asparagus, scallions, and cheese to one half of the egg whites, then flip other half over, omelet style. Turn off heat and allow omelet to cook another minute or two in the pan.
