Ingredients

Onions, raw, 1 cup, chopped
Garlic, 3 cloves minced
Olive Oil, 2 tbsp
Water, 8 cups
Chicken bouillon, 8 cubes
Golden Potatoes, 7 medium
Broccoli, frozen, 1 17oz package
Garlic powder, .75 tsp
McCormick Perfect Pinch All-Purpose Seasoning, 1 tsp
Salt, 2 tsp
1/2 cup Nutritional Yeast flakes
Pepper to taste
*Coconut Milk, 1 can or 1.5 cup (optional)

Tips
Directions
Saute the onions & garlic in olive oil.
Add the water, potatoes, & spices.
Bring to a boil & then add the bouillon cubes.
Add the coconut milk.
Reduce heat & simmer until potatoes are almost done.
Add the broccoli & simmer for 5 minutes more, or until potatoes are done.
Let soup cool.
Puree in the blender (if you want a chunky soup, set aside some of the cooked potatoes & then add them back to the rest of the soup after it's been pureed).
Serving Size: Makes about 10 Servings
