My "Buffalo" Wings

Number of Servings: 6

Ingredients

    2 boneless skinless chicken breasts
    1 c. flour
    1 c. bread crumbs or panko
    4 egg whites
    salt substitute
    ground black pepper
    chili powder or dry bbq seasoning

Directions

Cut breasts into tenders, approx. 1 1/2" x 3 ". Coat with flour, dip in egg whites (prepare whites by whisking until foamy but not stiff), then coat with bread crumbs. Place on baking sheet that has been sprayed with nonstick spray. Salt and pepper. Spray with nonstick spray. Bake in 450 deg. preheated oven for 10 minutes. Remove and sprinkle generously with dry bbq seasoning or chili powder. Return to oven for approximately 6-8 minutes.
