Introduction

I love biscotti in the store, but it is so expensive. Also, I don't care for the texture of store bought biscotti. I prefer a denser cookie. I think biscotti is a personal thing. Ingredients

    2 cups flour
    1/2 cup Splenda sugar blend for baking
    1/4 teaspoon salt
    1 teaspoon baking powder
    2 tablespoons soft butter
    1/4 cup lemon juice
    1/2 teaspoon lemon extract (more if you like a more intense lemon flavor)
    1/2 cup Better 'n' Eggs egg substitute

Directions

Mix all ingredients well. Prepare a baking pan with Pam or parchment paper. Shape the dough into a long cylinder on the pan (I use a jelly roll pan...Pampered chef bar pan stone actually). Flatten into a log about 14x4. Or make two logs...I prefer one big log. Bake at 350 degrees for 30 minutes. Cool on pan for 15 minutes. Remove log from pan, cut into diagonal slices about 1/2 inch wide. Return slices to the pan, cut sides down. Bake 10 minutes. Turn each piece and bake an additional 10 minutes. Makes 20 servings.
